  • – 100 g mixed salad
  • – 1/2 avocado cut into slices
  • – 1/2 mango cut into slices
  • – 1 artichoke boiled and cut in quarters
  • – 100 g boiled lobster

Champagne dressing

  • – 2 tbsp mustard
  • – 1 egg yolk
  • – 2 shots of Asti Martini champagne
  • – 150 ml Olea Juice™ EVOO
  • – 1/2 shot of vinegar

Beat all ingredients except for the oil which we add slowly, so that the dressing remains thickened.

Preparation Marinate all vegetables with the dressing. Serve and garnish with the lobster.
